Raspberries are loaded with antioxidants and high in vitamin C, K, fiber, and folate. Raspberries contain antioxidant compounds called polyphenols and flavinoids.
Raspberry Salad and Balsamic vinaigrette
For the salad:
- 2 cups spring mix style greens
- 1/8 cup thinly sliced red onion
- 2 T sprouted wheat berries
- 1/3 cup raspberries
For the vinaigrette:
- 2 T extra virgin olive oil
- 1 T balsamic vinegar
- 1 t dijon mustard
- salt and pepper to taste
Combine the olive oil with the vinegar, mustard, salt and pepper. Whisk to combine; Place the spring mix, onions, wheat berries, and raspberries in a bowl. Toss to combine with vinaigrette.
