Summer Tomato Salad

Make this salad for your 4th of July picnic. This is also great as a side dish or as a salad for lunch! The tomatoes are anti-inflammatory and contain anticancer carotenoid lycopene and beta-carotene.


1 pint red and yellow cherry tomatoes, halved if large
2-3 large sprigs basil, cut in strips
1/2 cup canned chick peas, rinsed
1/4 cup pitted Kalamata olives
1/4 cup roasted sunflower seeds
3 T olive oil
1 1/2 T golden balsamic vinegar, or vinegar of choice
Salt and freshly ground pepper to taste

Combine all ingredients in a medium sized bowl and toss to coat in dressing
